Flavored Miso (Bean Paste)

Among a variety of miso recipes, I like flavored miso paste. It gives great accent to rice balls, cucumber sticks, boiled/grilled tofu, etc. The recipe is really simple, just stir-fry your favorite veggies and add miso, sake and a little sugar. Japanese basil, mountain vegetables, myoga, ginger, garlic though I don’t use it often, you can try anything you like. “Fukinoto”, a kind of mountain veggies has a strong flavor and the it goes well with miso very much. They create vivid spring taste. I think it can be described as a gifted taste by soil.
